The Pastry Docker Roller is used to uniformly prick holes in pastry to aerate the crust. If pastry is not pricked prior to baking, steam will build up under the dough and cause it to crack. The docker works well for large pieces of pastry because ventilation will be even and can be done faster than with a fork.
